WIAW#41..Happiness
Happy Wednesday
I have been so busy with school. I am still trying to find that balance between everything. I will eventually. I think once I speak with my other professor I will be able to get a better handle on things. I have this one online class and I am so confused by the research paper. Anyway I read this great post from Steph Snacks the other day and it really had be thinking. She speak true words. It is all about being happy today, not when you reached that goal, when you turn a certain age or when we look the way we want. I am really seeing that and I plan on being thankful and happy for what I truly have. So for this week I thought I tell you 4 things I am happy for right now at this moment that I am choosing to focus on as well as my eats.

BREAKFAST

kale oatmeal again. I don’t think I will every get sick of it. I love the kale blended into my oatmeal. Veggies for breakfast for the win!. I cooked my oats in double the liquid so they blump up and it is a bigger serving. I topped it with a huge load of cinnamon and a couple of raspberries to make it pretty. I like making meals an event. They seem to taste better. Anyone else agree?
1. Friends- I know somewhat generic of a thing but I am truly happy for my friends. They are so amazing and supportive and fun. They are always there for me and have my back. So I am happy that I have such amazing friends.

Recent Night out at the Drunken Monkey. It is the bar owned by Big Ang. She was taking pictures so we though oh why not. From left to right my cousin/best friend chloe, my best friend Maritza, big Ang’s friend, Big Ang, my sister Nicole and I am in front. My brother was taking the picture. We had such a great night. Dancing and a few drinks. My cousin and I ever got a free shot because this old guy was impressed with how well we took shots. We shoot them back without a problem. He bought us 2 shots of patrone. Not to shabby.
LUNCH

Old picture but really this is what I had. I was going to take a picture of my lunch but I actually dropped it on the floor so my dad brought me a new one. Thankfully I plan my meals for the week so I had extra in the fridge. He came all the way to my job just to bring me lunch. I love him for that. He is such an amazing dad. So anyway I had to eat what he brought at my desk so I couldn’t snap a picture.
2. Finding a dance class. I have mentioned here I want to take a dance class for fun. I wanted to take hip hop but there was nothing that was for adults and fit my schedule so I was going to take ballet. I like Ballet but I really wanted Hip Hop. Well I found one the other day and I am so happy. I start Monday. I have never done it and it is so out of my comfort zone and I am so fine with that. I know it is going to be a lot of fun.
SNACK
No picture but I had celery and hummus, nothing picture worthy. I actually had this on my lunch brake to hold me over until my lunch came.
3. I completed 60 miles on Sunday!! I did the century tour 55 miles and wound up doing 60 because I got lost at the finish line but whatever. I am so happy I completed the whole thing and felt fine. I started to gas out at the end which I think is understandable but I did it. I finish the tour and had a great day with my dad. In the near future I will post a whole recap of the day. I didn’t take any pictures so I want to wait to see what they post.
DINNER

Started with salad. In the salad, mixed greens, arugula, peppers and figs. Drizzled with 2tbs balsamic vinaigrette.
4. Birthday Plans. This year I am actually celebrating my birthday on my birthday. I cannot remember a time I actually ever did that, even when I was little. My brother’s birthday is a week after mine and my sister a week after that so our parents always lumped us together. We would sing on our birthdays but we never celebrated our birthdays with anything on the day. I didn’t even on my 21st I wanted until the weekend but this year my birthday is on a Friday and I am going to a concert and then partying it up in Manhattan. I am excited.
SNACK

A protein smoothie made up of 1 cup of unsweetened almond milk, 2 tsp of cocoa powder, 1/2 scoop protein powder and ice. I also had a mixed fruit bowl that had cantaloupe, watermelon, honeydew, and some blueberries. I also had 2 tsp of peanut butter &co. Cinnamon raisin swirl nut butter. yummy. A my brother had a pumpkin scone from Starbucks so I had one bite of that. It was amazing. I love those things. I would never get one though. Not worth it but a bite I am down lol.
Well that is what I am happy for at the moment. What are you happy for this very moment?

Can I ask exactly how you prepare your eggplant? I can never make it taste good! But yours looks yummy.

And I prepare my eggplant very easy. Most of the time, (Like you see above) I grill it. I chop it in big chunks, put some oregano and garlic powder on them then through it on the grill for a couple of minutes (like 2-3 tops) and then grill the other side if it doesn’t look done enough for like a few minutes and that’s it. Sometimes i need to do that again. I even grill in the winter because i have a indoor grill. If I don’t grill then I roast them. I chop them up big chunks and toss it with a little bit of olive oil, oregano, and garlic powder and roast them in the oven for about 30 min at 375. I check on them every now and then and give them a turn. But otherwise it is pretty simple.
