WIAW #38…Empty Summer Staples

It’s WIAW!! I love this day. I also love this theme. This theme is pretty perfect for today since I am leaving on my vacation tomorrow and my fridge needs some cleaning out.
I am cleaning out my summer staples. Thank you the lovely Jenn for hosting this. Some Ideas Jenn gives to discuss:

I though Instead of my usual Day in the life WIAW, I though I would show you my eats while touching upon a few of these subjects a little.
BREAKFAST
Now oatmeal is always a staple around here for me. I cooked it in 1 cup of water, and 1 cup of milk. I then added in some protein powder when it was almost done cooking. Protein Powder is becoming a big staple for me. Then I topped it with some berries. Berries are a big summer staple here in my house. We cannot get enough of them. We buy so much and eat so much. Really we buy so much and eat so much. This week we actually had quite a few berries left, thank you costco, so I though i would throw a whole cup in there. My stomach agreed. It was delicious. I love berries in oatmeal. Raspberries and Blueberries sort of melt in so nicely. Delicious. Berries are something that are in season now so I love to get as many as possible. Once winter comes those babies get way to expensive. Also I prefer to hit on my local farmers market for berries but if mom goes shopping she goes to the supermarket and my wallet decides not to argue.
SNACK
Not pictured. 2 celery stalks and 2 tbs hummus. Summer makes me want celery a lot. I guess because its light and I like to eat light in the summer.
LUNCH
I made something different! On Saturday I made tofu. I sauteed tofu in 2tbs olive oil then once it cooked for a little I added 1 tbs of soy sauce and 1 tbs teriyaki sauce and added in some basil, thyme and something else I cannot remember. I felt like a real cook just throwing it in lol. Since I made this Saturday I had left overs and since I’m cleaning out the fridge I put it in a big salad. Lettuce, eggplant, zucchini, and some cucumbers. Summer= Big salad. Its a must and all these veggies are local.
DINNER
Started with salad. Since salad is a big summer staple we have a lot in my house so I had a big bowl. I added some tomato (I had a huge jersey tomato that needed using) and I added in some peppers.
Chicken and some eggplant, zucchini, broccoli, and string beans. This plate was huge and I did not finish it all. I couldn’t but I tried.
SNACK
Post workout protein Ice Cream. This is so summer. Nothing better then having a great workout and then coming home to this. This one had cantaloupe in it since i had to use that up too. Another summer staple melons. Yum Yum. This was good but my favorite combination is actually with pears.
My favorite combination: (not the one pictured above)
1 pear
1 cup of Almond Milk
1 scoop protein powder
1 tbs of cocoa powder
1/3 cup of water
1/3 tsp Xanthan Gum
1/2 tsp guar Gum
ice cubes
Directions( for a crappy blender, if you have a great blender like vitamix then throw it all in)
1. Add milk, protein powder, cocoa powder, and 2/3 of the pear. some ice ( like a scoop) Then blend.
2. Then add the water and Ice and blend again.
3. Then add the gums and blend
4. Pour in a bowl and add topping of your choice, the rest of the pear or other fruit and a 1tsp of nut butter and enjoy.
Well there you have it. Some summer staples that I have to eat before vacation. Now bed time because I am leaving for vacation tomorrow morning!!
