Hey Loves :)
It’s Monday again. How is everyone doing? I am doing ok. I really did not have a great weekend. Nothing terrible or anything but just filled with homework so nothing fun :(. School consumed my life this weekend so I feel as if I did not have anytime to refresh and get ready for the week ahead. College girl problems I guess lol. So anyway I bring you my weekend update, which is not much let me tell you, but I did receive one good thing so keep reading a bit lol.
So Friday I slept in late, well late for me. I slept until 10:30. I have not done that in so long. Granted I went to bed about 2 so It was not like I had lots of sleep. I was up late doing homework. I do need to give myself more sleep though. So anyway I woke up late and I enjoyed that. I had breakfast then went straight to doing more homework. I pretty much did that until Lunch, which was creamy carrot soup, then went back to homework then it was time for dinner. For dinner I tried a new recipe. I was flipping through Everyday Happy Herbivore and found the recipe for Island Portobello Burger. I loved her Portobello “Steaks” recipe from her previous book so when I saw this It called to me. I made it according to the recipe except I did not add as much chili pepper flakes because I find her stuff a little bit too spicy for my taste buds. Also I had it in a plate instead of on a bun. I have always preferred my “burgers” in a plate. I am not much of a burger bun person. It came out delicious.
After dinner it was gym time, more homework then I made my overnight oats for breakfast the next day. I didn’t get to bed until about 1:30
Saturday I woke up a little later then usual, 7:45 since I didn’t have work. I started my first day of my Kaplan LSAT prep course. I first had my overnight oats. I didn’t have a jar but I didn’t let that stop me. I made the Vegan overnight oats from Oh She Glows. The only exception was that I added only 1 tablespoons of chia seeds and omitted the vanilla extract and added cocoa nibs and jelly.I liked it but to be honest I prefer it my way.I don’t feel the banana really added anything to it other than sweetness so I think I will be sticking with my version of overnight oats from now on. I figure stick with what I like.
After breakfast I headed to my first LSAT prep course. The first day was a practice LSAT test so they can evaluate where we are skill wise. I hate this test with a passion I really do. So that was from 10-2, Yep the test is that long. So after I went home and did more homework. While I was doing homework mail came and inside my mail was my first conscious box! I was so excited. After that I hit the gym and while I was on the elliptical machine I read so sad news on my twitter.
Whitney Houston had died.
what a wonderful talent, gone too soon. When I was younger I love the bodyguard and would play I will Always Love You over and over. So sad I will miss her amazing voice.
So Sunday I woke up about 9:30 and tried a yoga DVD my father bought me and it was pretty good. It was a nice stretch for me nothing wonderful but I would probably do it again. After that I had a wonderful bowl of Pumpkin oatmeal and a pear then headed to school. Yes you read that correctly. School on a Sunday. I went to take a quiz for my finance course. So after that I came home made carrot soup again for lunch and then did more homework, hit the gym came home and watched the Grammy’s (Lady Gaga was robbed) and tried the Love Grown granola from my conscious box. It was really good. I liked the texture and flavor of it. I might need to pick up some hehe. Thenwent to bed. Nothing fun at all.
See I had no weekend. It kind of sucks but I tell myself that it will be worth it in the end. So on that note see you her Wednesday :)
