Another Christmas Adventure

I hope everyone had an amazing weekend and it helps them start their week off right. My weekend was lots of fun. On Friday I had no school which was awesome! It was a study day. My school gives one day to study before finals so of course I use that day to NOT study hehe. I honestly do not know anyone who actually uses that for its purpose. Friday I took my yearbooks pictures as I said in my previous post then I got in a nice workout then went home to bake. I made happy herbivore gingerbread scones. My friends were coming over so I decided to make a vegan desert for them. Well they weren’t exactly scones. I didn’t really shape them. I just put them on the sheet to bake. I am not that good at sculpting baked goods or anything really lol. I didn’t really mind. Next time though I will get some tools to help me shape them. The scones were so good but the ginger flavor was VERY strong. If you are not a fan of ginger I recommend using a lot less. I met up with my friends at 8 we went to see Christmas decorations. I love seeing the lights and figures people put up. On Staten Island there are four main houses to see. All of the people ask for is a couple of dollars for a charity it so nice. One of the houses we usually go to wasn’t decorated yet. We saw the guy still working on it
that was our favorite one too. Despite the little set back we still had loads of fun. (see end of post for pictures) we sang Christmas songs as we drove around and waved to random people. We were in such a good mood. After seeing all the pretty houses and taking loads of pictures we stopped at Walgreens to buy a pre-made gingerbread house and gingerbread train. The train was a little hard to figure out at first. We had to disconnect all the pieces then assemble them a certain way. It didn’t matter because we had so much fun doing it. We had to cut the night a little short because I had work on Saturday morning.
On Friday night I also experimented with the idea of overnight oats. I usually have instant oatmeal on Saturday mornings because I have work and its easy to bring. I heard about overnight oats on many blogs but I always thought it was strange because you don’t cook the oats. So Friday night I thought I give it a shot because I really needed something better for my breakfast. The cool thing is like hot oatmeal you can put anything on it. As long as you do not mind getting something soggy you can put it overnight with the oats. This was very tasty and filling. I will be having this for my Saturday work breakfast all the time. I enjoyed the way the oats soak up the milk. I think I will try it with some yogurt next time for some thickness but this was enjoyable and filling, the two most important things.
My Overnight Oats
Ingredients
1/2 cup of country choice oatmeal (any oatmeal with do)
1 cup of Almond milk (some use 1/2 cup of milk, 1/2 yogurt)
1/2 cup of blueberries
Directions
1. Pour everything in a container and put in the fridge over night.
2. Take it out in the morning and enjoy.
I know some bloggers heat it up before they eat it but the really its supposed to eat it cold. The choice is yours. Since I was at work cold was easier.

On Saturday after work (which was dead. Always happens around Christmas time) I hit the mall. The mall is so busy around Christmas but I need to Christmas shop. I am going next week with my mommy but I couldn’t buy her gift if she was around. I got her a necklace that says mom and its engraved saying Thank You very everything you do (on the front) Love Ashley (on the back). I cannot wait to see her face when she opens it on Christmas morning. I also got my sister a little something else. I already got her one gift but I saw it and thought of her. On Sunday I went to the movies with the family to see New Moon. I will post a review of that later in the week.
